Mozaic Gastronomique Bali Celebrates 18 Years of Superlative Dining with 7 Courses, Premium Wines, and a Memorable Dance Performance on Friday, June 28, 2018

On Friday, June 28, 2019, Mozaic Restaurant Gastronomique will host a “Dinner Spectacle” to celebrate its 18th anniversary.

To mark the special day, Chef-owner and Balinese culinary legend Chris Salans is preparing a 6-course degustation menu carefully married with 7 premium wines presented against a backdrop program of stellar entertainment presented by international choreographer Jasmine Obuko and the Kita Poleng Dance Troupe.

When Chris started his gastronomic sojourn nearly two decades ago, fine dining outside the environs of five-star hotels in Bali was still rare. When he opened the doors of Mozaic in June 2001, Chris boldly sought to pioneer combining ingredients and flavors from the Indonesian archipelago with modern French techniques of preparation and presentation. Both sensational and flavorful, this culinary approach has evolved into a culinary movement in Indonesia mentored by Chris where, now, a whole new generation of young Indonesian chefs eagerly showcase their skills in combination with only the finest of local ingredients.

In a life dedicated to good food and wine, it’s truly the journey that counts. The next stop on your very own delectable trip stops on June 29th on Jalan Raya Sanggingan in Kedewatan, Ubud, at the door of Mozaic Gastronomique where the Dinner Spectacle begins with welcoming Champagne and Cocktails presented with canapés, live entertainment, a cake-cutting ceremony, and thougtful brief recollections by Chris Salans of his dream lived in Bali to starts an evening for 60 extraordinarily privileged guests who will be staying for dinner.

More than 100 F&B industry and media influencers will be invited to attend the cocktail party.

None of us are allowed to pick the place of our birth, but there truly does seem to be “a force” somehow at play that draws us to where we need to be on the current stage of our spiritual sojourn. Born in the USA to a French mother who grabbed her infant son and fled home to France when Chris was ready for solid food, it was there that Chris academically learned his trade followed by three assignments in Michelin-starred restaurants in France and the USA. A lust to wander later brought him to Bali where another, more-refined longing, brought him to marry his Central Javanese wife, start a family, and embark on the legend-creating mission of establishing the Mozaic Restaurant Gastronomique and gastro-bar Spice by Chris Salans. Splendid cookery books and numerous international awards recognizing both Chris and his establishments followed, including his most recent crowning-glory of induction into the Association des Maîtres Cuisiniers de France populated, past and present, by a pantheon of French culinary genius.

A spiritually-defined path also seems to have had in a hand in the development of Mireki Jasmine Okubu. Born in Turkey to Japanese parents, a precocious ability as a child dancer prompted her parents to uproot to Bali to in order that their very young daighter could pursue a passion for Balinese dance. In Bali, the amenable and accepting Balinese accepted the genuinely interested young girl into their dances circles, eventually permitting Jasmine to master a large Balinese dance repertoire, winning prestigious Balinese dance competitions along the way.

Jasmine Okubu’s and Chris Salans’ characters are both imbued with an eagerness to learn and personally excel. They view challenging encounters with foreign cultures never as barriers, but only as new fields of understanding and personal growth waiting to be conquered.

The evening of Friday, June 28, 2019 will be an evening of refined theatricality and live performance showcased with a 6-course tasting menu with optional premium wine pairings.

Pricing and Booking

Price for cocktail reception and six-course dinner is Rp 1,850,000 plus 21% tax and service per person.

Optional buy-in for wine pairing is Rp. 990,000 plus tax and service per person.  Alternatively, the Mozaic’s extensive drink list include non-alcoholic selections, and an award-winning wine list are available on an à la carte basis.

Space is limited to 60 paying guest and advance reservation are essential.
