Chris Salans’ Mozaic Gastronomique Celebrates its 18th Anniversary

On Friday, June 28, 2019, the pioneering fine fining venue in Ubud, Central Bali - Mozaic Gastronomique became the gathering spot for a large group of friends and admirers of Bali’s most internationally-decorated chef and Mozaic-founder to celebrate 18 years of superlative dining.

The Mozaic was one of the very few Ubud venues focused on fine dining when it opened its doors in June 2001. American-born, French nurtured and trained, and very much in love with his adopted country of Indonesia - Chris Salans explored jungles, villages and local markets as culinary playgrounds where he sought out new ingredients and recipes that he could take “one step further” by applying modern cooking techniques and fine dining presentations.

Many talented young Indonesian chefs became disciples of this remarkable man and his approach to cooking, following Chris on his sojourn of discovery and, in doing so, fostering a new approach to nouvelle cuisine with a definite Balinese accent.


Divided into two parts – the anniversary evening at Mozaic Gastronomique commenced with cocktails, canapés, champagne, cocktails, and cake in the Mozaic’s Lounge from 5:00 until 7:00 pm. During the conviviality, talented dancer Jasmine Okubu entertained with an inspiring contemporary performance.

Later, a large cake was brought into the room while Chris Salans reflected on the past 18 years of culinary success and his personal hopes for the many years ahead working together with his supremely talented team.

At 7:00 pm some 60 special guests continued the celebration by adjourning to the main restaurant to enjoy a specially prepared 6-course menu served with fine premium wines.
