Another much-awaited night of culinary excellence at the Bulgari Resort Bali is scheduled for Friday, June 28, 2019, presented by visiting Chefs Thitid Tassanakajohn (Chef Ton) from Le Du in Bangkok and Luca Fantin from Il Ristorante – Luca Fantin in Tokyo

The first in a series of new gastronomic events for 2019 from The Bulgari Resort Bali, this rare and unique collaboration features two Michelin-starred restaurants and celebrated winners of this year’s Asia’s 50 Best Restaurants who are internationally-renowned for their cuisine style, philosophy and craftsmanship.

Chef Ton, as a child was nurtured as the “unofficial junior taster” in his mother’s and grandmother’s kitchen brimming with home-cooked Thai dishes.

Upon the completion of his Economics degree from Chulalongkorn University, he continues to pursue his dream at the prestigious Culinary Institute of America (CIA) and an MBA in Hospitality from Johnson & Wales University. During his time in New York, Thitid has worked at several Michelin-Starred restaurants, including Eleven Madison Park, The Modern and Jean Georges.

His enthusiasm for wine also led him to become a Certified Sommelier (CS) from the respected Court of Master Sommelier.

Returning to Thailand with a vision to elevate Thai cuisine generally, he’s now in charge of the kitchens at Le Du and Baan.

Le Du derives its name from the Thai word for “seasons” and is reflected in Chef Ton’s focus on traditional flavors and local seasonal ingredients inter-mingled with the progressive techniques of the modern French kitchen. Not going unnoticed, Chef Ton’s restaurant has been earned one Michelin star in 2019 and a rank of number 20 in this year’s rankings of “Asia’s 50 Best Restaurants.”

Luca Fantin

Luca Fantin is the Executive Chef of Bulgari’s Il Ristorante - Luca Fantin in Tokyo. He received his diploma from the I.P.S.S.A.R. Hotel School in Treviso. Before working at the Bulgari Ginza Tower, he was sous-chef at La Pergola in Rome. He has also worked at other top level restaurants such as Cracco in Milan, Gualtiero Marchesi’s Hostaria dell’Orso in Rome, Akelarre and Mugaritz in Spain, and RyuGin in Tokyo. In 2016, Bulgari published “La Cucina Di Luca Fantin” - a sophisticated coffee-table edition published by Assouline featuring original photography, an exquisite collection of recipes, and the sharing of the chef’s inspiration behind each dish.

The very first Italian chef in Japan to be awarded a Michelin Star together with numerous other recognitions, including a ranking of 18 in the current list of “Asia’s 50 Best Restaurants,” Luca Fantin is famous for showcasing his interpretation of contemporary Italian cuisine inspired by his long culinary affiliation with the island of Bali. His dishes unfailingly reflect an attention to detail and insistence on using only top-quality seasonal ingredients that he transforms with refined cooking techniques and a Maestro’s unmatched stroke of kitchen creativity.

Luca Fantin and Chef Ton will join talents to harmoniously create a memorable 8-course dinner combining contemporary Italian and modern Thai cuisine using only the finest local and organic produce that will be paired with a discerning selection of premium wines - all lovingly laid before diners in an intimate setting overlooking the Indian Ocean.

Inspired by its original namesake in Tokyo, Il Ristorante - Luca Fantin in Bali pays homage to traditional Italian cuisine. Featuring a unique interpretation by its chef, the dishes are blended with a seductive ambience overlooking a reflection pond, enhanced with romantic soft lighting.

Limited seating is available on a first-come-first served basis at Rp 3,500,000 plus tax and service per person, inclusive of wine pairing.
