The Westin Resort Nusa Dua, Bali has welcome renowned Italian Chef de Cuisine Valerio Pachetti as a member of its culinary team. He comes to Bali from The Westin Pune Koreagon Park in India where he introduced authentic Italian cuisine at the award-wining Prego Restaurant.
Born in Colombia, South America, to Italian parents, Chef Valerio enjoyed a multi-cultural upbringing where good food formed the focal point of his daily life. After graduating from a private culinary school in Rome, he went on to augment his skills at a number of pizzerias and seafood restaurants in Rome. For the next few years Chef Valerio travelled extensively and accepted a succession of culinary roles in exotic destinations such as Brazil, Myanmar, Vietnam, India and the Caribbean. After a period of exploring the world, he decided to hone his skills further by returning to his Italian roots in a Michelin-starred restaurant in Sicily.
Aside from his love of cuisine, Chef Valerio is also passionate about language. He speaks fluent Spanish, English, French and Portuguese as well as basic Vietnamese and Mandarin. Now in Bali, he is busily studying Bahasa Indonesia.
Chef Valerio has come to the island of Bali with an assignment to oversee the set-up of Prego
- a Westin concept restaurant that strives to put the fun back into Italian dining. This family-friendly venue will be part of a new wing at the Resort that is nearing completion scheduled in August 2013.
With its open-plan kitchen, vibrant decor and uplifting ambience, Prego
aims to be the ultimate place in Bali to experience authentic Italian cuisine. The young chef is currently familiarizing himself with local produce in an effort to source the freshest and top quality ingredients. Generous portions of classic pasta dishes along with regional specialties and wood-oven pizzas will, according to the restaurant’s creators, represent real value for money.
Chef Valerio is planning an array of special touches to set Prego
apart in Bali’s busy restaurant and dining scene. Personable, the chef has declared his desire to find time to talk to each guest and host pizza workshops for young diners. Also planned are Sunday brunches that promise to be a highlight of a weekend for in-house guests and local residents alike with cooking stations, clowns and a farmer’s market.
True to his Italian lineage, Chef Valerio feels it is important to maintain the integrity of Italian cuisine through the use of traditional recipes and quality ingredients. He is inclined to do little to alter dishes that have become a tried and tested mainstay in Italian homes for generations. Prego’s aim is to present a balanced menu of delicious fare that is both healthy and flavorful.
