The Westin Resort Nusa Dua, Bali has welcomed Rajender Kumar Maitola to the property as its new Indian Chef.
Chef Rajender arrived in Bali direct from a 3 year stint as Junior Sous Chef with Sujan Luxury Hotel, Delhi.
Rajender studied at the Delhi Institute of Hotel Management & Catering Technology. Upon graduation, he embarked on a culinary career with the prestigious Aman chain of hotels and resorts. Quickly rising through the kitchen ranks, he experienced a succession of appointments including stints as Chef de Partie at Aman-I-Khas, Sawai Madhopur, Rajasthan and then Aman Lodi, New Delhi. Serving in pre-opening capacities, Chef Rajender was instrumental in menu setting and standard operational procedures.
Passionate about food in general, Chef Rajender sees himself as a culinary innovator. He is proud of his Indian heritage and keen to share the distinctive flavors of his homeland with Westin guests in Bali. Since his arrival, Rajender has been busy familiarizing himself with the availability of fresh and seasonal produce on the island.
He has also been discovering many parallels between Indian and Balinese cuisine, including the use of indigenous herbs and spices.
As a devote Hindu, Chef Rajender is looking forward to sampling local delicacies that form part of the Balinese religious calendar.
Once settled into his new role, Chef Rajender will be revitalizing the menu of Indian cuisine currently available at the resort. He will also introduce a few of his own specialty dishes from the different regions of Indian sub-continent.
