After closing in late March in compliance with government directives to thwart the spread of the COVID-19 Pandemic, Bali’s Celebrity Chef-Owner Chris Salans has announced that both the Mozaic Restaurant Gastronomique and Spice by Chris Salans, both in Ubud will reopen for business on 01 June 2020.
The reopening follows a careful review of Bali’s implementation of policies to break the chain of coronavirus infection, a global survey of best practice in the restaurant and hospitality industry, and two-months of intensive hygiene and sanitation for both the kitchen and service staff at Salans’ two popular dining places in Ubud.
Commenting on the reopening, Salans said: “I am happy to be reopening our restaurants to allow our team to get back to work without compromising the safety and security of our guests or team members, which will always be our uppermost consideration. With the help of my colleagues in Europe, I was able to have access to the newest standards of operations specific to the Covid-19 pandemic. After weeks of hands-on training, I am confident that my team is ready to serve our guests in a safe environment.”
In collaboration with Les Grandes Tables du Monde, a worldwide association of 2 and 3 Michelin Star Restaurants of which Mozaic is part, Chef-Owner Chris Salans was able to access the latest standards and procedures for hygiene and sanitation in the COVID-19 era.
The teams have trained to these exacting standards, with Chef Chris Salans confident to now reopen his restaurants to the public.
While Mozaic and Spice by Chris Salans will continue to be renowned for their outstanding cuisine, some of the post-COVID-19 innovations incorporated into the daily operations include:
· All areas of food preparation and service now operate with exacting Standard Operating Procedures (SOPs) developed to ensure the safety of guests and staff.
· Thermal scanning of body temperatures and inquiring regarding COVID-19 symptoms for both guests and employees.
· Providing hand sanitizer for both guests and employees.
· 2-meters of distancing between tables.
· Generally maintaining 2 meters distancing between staff and between staff and guests.
· Daily sanitizing of entire restaurants.
· Regular sanitizing of all high contact surfaces.
· Sanitizing of tables and toilets after each guest’s use.
· Regular hand washing by all staff
· Wearing of masks, goggles, and gloves by staff
Mozaic Restaurant Gastronomique
Mozaic Restaurant in Ubud initially reopens by welcoming guests for private dining experiences and private hands-on cooking classes in its Workshop, located at the back of its tropical garden. Open daily, guests will have access to the entire Workshop, enjoyed in privacy for either a customized designed cooking class or a degustation lunch or dinner with optional wine pairing.

Spice by Chris Salans
Spice by Chris Salans, Chris’s casual gastro bar located on Ubud’s high street, will open its doors daily to guests with limited seating from 11:00 am to 8:00 pm. A menu of signature dishes and cocktails is available for dine-in or takeaway and delivery.
