A unique culinary event that should be on the calendars of all Bali-based “foodies” will occur on Saturday, 18 February 2023, organized by Balinese celebrity chef Chris Salans of Mozaic Gastronomique working together with the Bali Chapter of Disciple Escoffier Indonesia Association.
The memorable evening begins in the picturesque West Coast setting of the Hemingway Event Space at Bali Beach Glamping [Google Map Link].
Inclusive cocktails will be served at 5:00 pm, and a lavish 5-course fine-dining dinner with paired wines will follow. Modjorido Band will provide live music, and lucky door prizes will be given away.
The evening will see the winning dishes and their chef creator awarded prizes.
Black Box Challenge
Promoted as a Hemingway Chef Cookoff, 5 leading Bali-based chefs will compete in an innovative “black box cooking competition.” Five days before the competition starts, each chef will be given a “black box” containing a secret list of ingredients from which they must “create” 5 prize-winning food courses.
Disciples Escoffier Indonesia
Disciples Escoffier International is a non-profit association with membership limited to culinary professionals counting more than 30,000 members across more than 30 countries.
With a membership of 70% professional chefs, this Association draws its inspiration from the “King of Chefs,” – Auguste Escoffier (1846-1935), after whom they have drawn the Association’s name. Chris Salans – Founder Mozaic Gastronomique Restaurant
Chris Salans founded the landmark Ubud dining establishment Mozaic in 2001, quickly becoming the Island’s most highly-respected fine dining venue. From its onset, Mozaic has reflected Salan’s training and reputation as a top-level French Chef and his comprehensive understanding of local Balinese cuisine and endemic Indonesian ingredients. This wedding of techniques and seemingly disparate ingredients has resulted in a “marriage made in heaven” still enjoyed today by diners at this Bali dining landmark.
Over the intervening more than two decades since the founding of Mozaic, Chris Salans has continued to receive many accolades, including being drafted into membership of the cooking pantheon – Association des Maîtres Cuisiniers de France (Association of the Master Chefs of France) and being named a Chevalier of France’s Légion d’honneur for his tireless dedication to promoting French culinary culture in Indonesia.
A published author of award-winning cookery books, Chris Salan’s unique personal history magically intermingles the culinary traditions of the New World – his USA place of birth; the gastronomical eloquence of France – bestowed via formal training as a young chef in the homeland of his Mother; and professional expertise acquired in France and New York – all guided by the world’s leading chefs.
Spending more than 25 years in Bali has left Salans with a passion for Asian cuisine and an understanding of the rich array of natural ingredients available in the region. The results of his eager embrace of Asian ingredients and French cooking techniques result in dishes unlike those found anywhere else.

The Competitors: Hemingway Chef Cookoff at Bali Beach Glamping
The five competing chefs bring their skills and reputation to bear in the coming competition.
Alexander Chong – Malaysian-born and with pan-Asian cooking experience as Executive Chef at many top hotels, casinos, and resorts – Chef Chong is an honorary member of the World’s Association of Master Chefs.
Mandif Warokka – Born in the remote Indonesian province of Papua, Chef Mandif has traveled the globe working in such 5-star settings of Abu Dhabi’s Desert Palm and some of Europe’s most prestigious culinary institutions. During his career, Chef Mandif has reaped well-deserved praise as a restauranter in opening Teatro Gastroteque and Blanco par Mandif – both in Bali.
Wayan Kresna Yasa – Wayan Kresna Yasa is a Balinese chef who earned his working stripes while building a formidable culinary reputation during Bali and the USA assignments. He has championed modern Indonesian cooking and published a cookery book (2022), “PAON: Real Balinese Cooking PAON: Real Balinese Cooking” (2022 -Hardie Grant Books). He is the Chef-Owner of the popular new Indonesian café, HOME by Chef Wayan, in the west coast village of Pererenan, Bali.
Bayu Timor – Born in East Java as a boy, Bayu dreamed about becoming a chef. An unwavering commitment to the culinary arts and love of fine dining paved future career steps that led him to award-winning resorts and restaurants in Bali, including Mandapa, where he helmed five food and beverage outlets, including Kubu – an open-air restaurant by the river, serving fine Mediterranean-European cuisine. He represented Indonesia in the prestigious Bocuse d’Or Asia-Pacific 2018 in Guangzhou, China.
Fabianus Sorlury – An Indonesian Chef from Maluku, Sorlury built his career in Bali, Lombok, Jakarta, and Gili Trawangan. At the same time, he developed growing expertise in vegan and vegetarian dishes. He founded The Wrap It Kind Sandwich Shop in Gili Trawangan before its destruction in an earthquake in 2018.
In 2021, Sorlury joined Bali Beach Glamping as Head Chef, developing the menu for the beachfront restaurant Bistronomy Kitchen at Hemingway Lounge.
The Beneficiary – Bali Bersama Bisa
Bali Bersama Bisa (Bali, Together Can Do It! – BBB) is a grouping of 10 non-governmental organizations focused on providing mental health services for everyone! BBB operates an all-inclusive facility owned and operated by the marginalized and often stigmatized communities that have come together to offer specialized treatments for those facing community-wide marginalization. Those benefiting from the work of BBB include people suffering from bi-polarism, schizophrenia, physical disabilities, cancer diagnoses, HIV positive status, transgenderism, addiction, and suicidal tendencies.
Proceeds from the Hemingway Chef Cookoff will benefit Bali Bersama Bisa, allowing the organization to broaden inpatient treatment options, detoxification, stabilization, and other necessary procedures for those currently unable to access professional mental health treatments.
