Conrad Bali, the 5-star resort located on Tanjung Benoa near Nusa Dua, will showcase Singapore’s signature dishes through 31 May 2022 at Suku Restaurant.
The result of a culinary collaboration with famed Singapore Chef Bernard Chew and Conrad Bali’s Culinary Team, led by Executive Sous Chef Made Semawan, savory and succulent Island Republic delicacies including Singaporean Laksa and Crab dishes await hotel guests, tourist visitors, and Island residents dining at Suku Restaurant.
Chef Bernard’s stellar career in the kitchen spans over 30 years. Growing up in a household with a passion for food, he has taken his Singaporean heritage to heart. He now shares family secret recipes and dishes through his solely-created concept, “Little Singapore by Chef Bernard. ” A man of many parts who is known for his diverse talents, Chef Bernard’s resume includes dedicated ventures into Music, Lighting Design, and Events Production in Singapore and Indonesia. Such is his fame and skill, Bernard Chew now designs lighting plans for performances for international celebrities that include high-profile expanding his creativity into a lucrative lighting business, designing for high-profile celebrities such as Jennifer Lopez, David Foster, and lighting specialist Steve Blair. He also designed lighting concepts for famous nightclubs in Singapore like “Zouk,” where he performs as a DJ.
Chew moved to Bali in 2016, creating Little Singapore as a place to enjoy delicious and authentic Singaporean food. Driven by his passion, generosity, and willingness to share happiness with everyone around him, he continues to cook food for high-profile clients on special occasions. He also privately caters to Indonesian celebrities like Jessica Iskandar, Happy Salma, Julia Estelle, Iko Uwais, Helmi Yahya, who have become regular customers. This inspiring Chef believes that everything in life should be done with passion, in keeping with his goal of serving “real Singaporean” cuisine in Bali.

During Bernard Chew’s limited engagement at Conrad Bali, “must-try items” on the menu are “The Crab Choices” – particularly the Salted Egg Crab and the Black Pepper Crab. Bernard Chew’s crab dishes use Papua Crab, universally known for its size and flavor. Please note the famous Singaporean Chili Crab requires a day’s advance notice to prepare, so be sure to book in advance.
Other menu highlights are Singapore Authentic Laksa with either King Prawn, prawn, or chicken.
Bernard emphasizes that each dish is authentically Singaporean, with every bite crafted to remind the diners of the vibrant food scene in Singapore.
Located just below the lobby with a stunning view of the lush tropical garden and shimmering pool, Suku Restaurant is home to comfort food which offers balanced dining choices that are environmentally friendly, healthy, and treads lightly. This casual dining restaurant features a modern interior with design elements inspired by local Balinese fabrics. It offers a spacious indoor dining area that can comfortably seat small and big groups of diners.
